Chicken Nihari

Chicken Nihari is a rich, spicy, and velvety South Asian stew made with large bone-in chicken pieces, slow-simmered in an aromatic masala gravy thickened with a light flour slurry. While traditional Nihari uses beef shank, Chicken Nihari cooks much faster while retaining the signature deep, spicy flavor and silky texture.

Ingredients

1. Chicken & Gravy Base

  • Chicken: 1 kg (large bone-in pieces, like drumsticks and thighs)

  • Ghee / Oil: ¾ cup (Ghee gives the most authentic flavor and rich oil float)

  • Ginger-Garlic Paste: 2 tbsp

  • Wheat Flour (Atta): 4–5 tbsp (dissolved in 1 cup water to make a smooth slurry)

  • Onion: 1 medium (finely sliced for fried garnish/tarka)

2. Nihari Masala Spice Mix

  • Kashmiri Red Chili Powder / Red Chili: 1½ tbsp (for deep color and heat)

  • Fennel Seeds (Saunf): 1½ tbsp

  • Dry Ginger Powder (Sonth): 1 tsp

  • Coriander Powder: 1 tbsp

  • Cumin Seeds: 1 tsp

  • Whole Aromatics: 2 bay leaves, 1 black cardamom, 4 green cardamoms, 1-inch cinnamon stick, 4 cloves, 1 star anise, ¼ tsp nutmeg & mace (jaiphal & javitri), ½ tsp black peppercorns

  • Salt: 1½ tsp (to taste)

Golden Rules for Perfect Nihari

  1. Separate the Oil (Tari): Before adding the flour slurry, skim off the floating spice-infused oil (tari) into a small bowl. The flour slurry absorbs surface oil, so pouring the saved tari back over the bowl before serving ensures a rich restaurant-style finish.

  2. Smooth Flour Slurry: Whisk whole wheat flour thoroughly in cold water to eliminate lumps before stirring it into the boiling stew.

Step-by-Step Recipe

1.Prepare the Nihari Masala:Grind whole spices.

Dry roast the fennel seeds, cumin, coriander, and whole spices (cardamoms, cinnamon, cloves, bay leaves, peppercorns, nutmeg, mace) for 1–2 minutes until fragrant. Grind them into a fine powder, then mix with chili powder, ginger powder, and salt.

2.Sear the Chicken:Sauté until chicken changes color.

Heat ¾ cup ghee in a heavy pot over medium heat. Add ginger-garlic paste and sauté for 30 seconds. Add chicken pieces and stir-fry (bhunai) for 5–7 minutes until the meat turns opaque and lightly browned.

3.Cook Spices & Skim the Tari:Bloom spices & reserve oil.

Add the prepared Nihari masala to the chicken and cook for 2–3 minutes on medium-low heat. Add 3–4 cups of water, cover, and bring to a simmer for 15 minutes. Once oil floats to the top, use a ladle to skim off most of the red oil (tari) and set it aside in a bowl.

4.Thicken with Flour Slurry:Whisk wheat flour with water.

Whisk 4 tablespoons of wheat flour into 1 cup of room-temperature water until smooth. Lower the stove flame and gradually pour the slurry into the stew while stirring continuously to prevent lumps.

5.Simmer on Low Heat (Dum):20-25 minutes low heat.

Cover the pot and let the Nihari simmer on very low heat for 20 minutes until the gravy thickens to a silky consistency and the chicken is tender.

6.Tarka & Serve:Pour saved tari & garnishes.

Fry sliced onions in 2 tbsp ghee until golden brown and pour over the gravy (optional tarka). Dish out the Nihari, pour the reserved red oil (tari) over top, and garnish generously with fresh julienned ginger, chopped green chilies, coriander, and lemon wedges.
