Chicken Qorma (Korma) is a iconic South Asian curry known for its rich, aromatic gravy (danedar texture) made with golden-fried onions, whisked yogurt, whole spices, and fragrant nut paste or Kewra water. Unlike regular chicken curries, authentic Qorma contains no tomatoes or garlic-heavy bases.
Ingredients
Chicken: 1 kg (bone-in pieces)
Oil or Ghee: ¾ cup (Ghee gives the most authentic flavor)
Onions: 3 medium (thinly sliced)
Yogurt (Dahi): 1 cup (whisked)
Ginger-Garlic Paste: 1½ tbsp
Ground Spices: 1 tbsp red chili powder, 1½ tbsp coriander powder, ½ tsp turmeric, 1 tsp salt (to taste)
Whole Aromatics: 2 bay leaves, 4 green cardamoms, 1 black cardamom, 4 cloves, 1 small cinnamon stick, 8-10 black peppercorns
Finishing Touches: ⅛ tsp nutmeg & mace powder (Jaiphal & Javitri), ½ tsp garram masala, 1 tsp Kewra water, 10-12 blanched almonds (optional)
The Secret to Perfect Gravy (Danedar Texture)
Crush, Don't Grind the Onions: Fry onions until golden, drain on paper towels to crisp up, then coarsely crush them with your hands or a mortar and pestle. Never blend them with water into a paste, or the gravy will lose its classic grainy texture.
Whisked Yogurt Base: Whisk the yogurt thoroughly with coriander powder before adding it so it doesn't curdle on heat.
Step-by-Step Recipe
1.Fry and Crush the Onions:Golden brown & crispy.Heat ghee/oil in a heavy-bottomed pot over medium heat. Add sliced onions and fry, stirring constantly, until evenly golden brown. Remove immediately onto paper towels. Once cooled and crisp, crush them coarsely using your hands.
2.Sauté Whole Spices & Chicken:Bloom aromatics. In the same hot oil, add the whole spices (cardamom, cinnamon, cloves, bay leaf, peppercorns). Sauté for 30 seconds until fragrant. Add the chicken and ginger-garlic paste; stir-fry for 5–7 minutes until the chicken turns white.
3.Add Spices & Yogurt:Form the base.Lower the heat. Add red chili powder, coriander powder, turmeric, and salt. Pour in the whisked yogurt. Stir well on low-medium heat for 5 minutes until the oil starts separating from the mixture.
4.Add Crushed Onions & Simmer:Build the signature texture.Mix in the crushed fried onions and blanched almonds along with 1 cup of warm water. Stir well, cover with a lid, and simmer on low heat for 15–20 minutes until the chicken is tender and the oil floats to the top.
5.Add Nutmeg, Mace & Kewra Water:Aroma finish.Sprinkle the nutmeg, mace powder, garam masala, and Kewra water over the curry. Cover and turn off the heat. Let it rest for 5 minutes before serving hot with Sheermal, Taftan, or Roghani Naan.
