Step-by-Step Recipe
.Marinate the Chicken:Rest for at least 30-45 minutes. In a large bowl, combine the chicken with yogurt, ginger-garlic paste, ground spices, fresh herbs, lemon juice, salt, and half of the fried onions. Mix thoroughly and let it marinate.
.Par-Boil the Basmati Rice:Cook until 70-80% done.Bring a large pot of water to a rolling boil with the whole spices, oil, and salt. Add the soaked rice and boil for 5–7 minutes until the rice grain breaks into 3 pieces when pressed between fingers. Drain and set aside immediately.
.Cook the Chicken Gravy:Build the aromatic base.In a heavy-bottomed pot (or handi), heat 3 tbsp oil/ghee. Add the marinated chicken and cook on medium-high heat for 8–10 minutes until the chicken turns opaque and oil starts separating from the masala.
.Layer the Biryani:Build flavors before steaming.Lower the heat. Evenly spread the par-boiled rice over the chicken gravy. Top with remaining fried onions, chopped mint, coriander, a drizzle of ghee, and yellow saffron milk.
.Cook on Dum (Steam):15-20 minutes low heat.Seal the pot tightly with a lid (or foil). Cook on medium heat for 5 minutes, then turn heat to the lowest setting for 15 minutes. Turn off the heat and let it rest undisturbed for 10 minutes before gently fluffing with a flat spoon.
