Pro-Tips for Ultra-Crispy Puris
Knead a Stiff Dough: The dough must be firm and stiff, not soft. If the dough has too much water, the puris will turn soft and soggy after frying instead of hollow and crisp.
High-to-Medium Heat: Drop rolled puris into hot oil; press gently with a slotted spoon so they puff up instantly like balls. Lower heat slightly to let them fry until golden brown so they hold their shape.
Step-by-Step Recipe
1.Knead the Puri Dough:Rest dough for 20-30 minutes. In a bowl, mix suji, maida, and 1 tbsp oil. Gradually add warm water and knead into a firm, tight dough. Cover with a damp cloth and let it rest for 25–30 minutes.
2.Prepare the Spicy Mint Water (Teekha Pani):Blend and chill.Blend mint, coriander, green chilies, tamarind pulp, and a splash of water into a smooth paste. Transfer to a pitcher, add 3-4 cups of chilled water, black salt, chaat masala, roasted cumin powder, and ginger powder. Stir well and refrigerate until icy cold.
3.Make the Filling:Simple potato-chickpea mix.In a bowl, combine coarsely mashed boiled potatoes, boiled chickpeas, chaat masala, roasted cumin, red chili powder, and salt. Mix well and set aside.
4.Roll and Cut Puris:Roll thin and cut circles.
Divide the rested dough into small balls. Roll out a very thin sheet using a rolling pin (or roll tiny individual balls). Cut into small circles using a cookie cutter or small round bottle cap.
5.Deep Fry the Puris:Fry until golden and hollow.Heat oil in a deep frying pan over high flame. Drop in 4–5 cut dough circles at a time. Press each gently with a slotted spoon until it puffs up into a hollow ball. Flip and fry on medium heat until golden brown and crispy. Drain on paper towels and cool completely.
6.Assemble & Serve:Crack, fill, and sip!.Gently poke a hole in the center of a crispy puri using your thumb. Stuff with a spoonful of potato-chickpea filling, add sweet tamarind chutney (optional), dip or pour in icy teekha pani, and eat in one bite!
