Halwa Puri
Halwa Puri (or Halwa Puri Chana) is an iconic traditional South Asian breakfast platter. It combines soft, puffed fried flatbreads (Puris) served with sweet semolina pudding (Suji ka Halwa), spicy chickpea curry (Chana Masala), and often a tangy potato curry (Aloo ki Bhujia).
Ingredients
1. Soft Puffed Puris
All-Purpose Flour (Maida): 2 cups
Yogurt (Dahi): 2 tbsp (keeps puris soft)
Oil or Ghee: 1 tbsp (for dough) + Oil for deep frying
Warm Water: As needed to knead a soft dough
Salt: ½ tsp
2. Sweet Suji Halwa
Semolina (Suji): 1 cup
Ghee: ¾ cup
Sugar: 1 cup
Water: 3 cups
Yellow/Orange Food Color: A pinch (for traditional halwai-style color)
Cardamom Pods: 3–4 (crushed)
Nuts: Sliced almonds and pistachios for garnish
3. Spicy Street-Style Chana Masala
Boiled White Chickpeas: 2 cups
Onion: 1 medium (finely pureed)
Ginger-Garlic Paste: 1 tbsp
Spices: 1 tsp red chili powder, 1 tsp cumin powder, 1 tsp coriander powder, ½ tsp turmeric, 1 tsp chaat masala, ½ tsp black salt, ½ tsp kalonji (nigella seeds)
Oil: ¼ cup
Pro-Tips for Halwai-Style Puris & Halwa
Rest the Puri Dough: Knead a soft, pliable dough and rest it for at least 30–45 minutes covered with a damp cloth. Rested dough stretches easily without shrinking back.
Smoking Hot Oil for Puris: Drop puris into very hot oil. Press down gently with a slotted spoon so the steam inflates the puri into a puffy ball within 5 seconds.
Syrup Method for Halwa: Boil water, sugar, cardamom, and food color separately into a sugar syrup before pouring into roasted suji. This prevents lumps and keeps the halwa soft and velvety.
