Kheer (or Rice Kheer) is a traditional South Asian rice pudding made by slow-cooking basmati rice with whole milk, sugar, and green cardamom until thick and creamy, then garnishing with sliced nuts and saffron.
Ingredients
Milk: 1.5 liters (full-cream / whole milk works best)
Rice: ¼ cup Basmati rice (soaked for 30 minutes)
Sugar: ½ cup (adjust to taste)
Cardamom: 4–5 green cardamom pods (crushed) or ½ tsp cardamom powder
Nuts & Aromatics: 2 tbsp sliced almonds, 2 tbsp sliced pistachios, a pinch of saffron strands (zafran), and 1 tsp Kewra water or rose water (optional)
Pro-Tips for Perfect Kheer
Coarsely Crush the Rice: After soaking, lightly crush the rice grains between your palms or pulse briefly in a blender. This releases starch faster and gives a richer, velvety texture.
Prevent Burning: Rinse the cooking pot with cold water before adding milk—this creates a moisture barrier that stops milk solids from sticking to the bottom.
Step-by-Step Recipe
1.Soak & Crush the Rice:Soak for 30 mins.Wash ¼ cup basmati rice and soak in water for 30 minutes. Drain the water and coarsely crush the rice with your hands or pulse once in a grinder.
2.Boil the Milk:Use a heavy-bottomed pot.Rinse a heavy pot with a splash of water, then pour in 1.5 liters of full-cream milk. Bring to a boil over medium heat, stirring occasionally.
3.Add Rice & Simmer:30-40 minutes on low heat.Add the crushed rice and cardamom powder to the boiling milk. Lower the heat to low-medium and simmer uncovered, stirring frequently and scraping down milk solids from the sides of the pot until the rice is fully cooked and the milk thickens by half.
4.Add Sugar & Nuts:Cook for another 5-7 minutes.Stir in ½ cup sugar, sliced almonds, pistachios, and saffron strands. Continue stirring until the sugar dissolves completely and the kheer reaches your desired consistency (keep in mind it thickens further as it cools).
5.Finish & Chill:Serve warm or chilled.Turn off the heat and mix in Kewra water if using. Serve warm, or let it cool to room temperature and chill in the refrigerator for 2–3 hours before serving.
