Macaroni

Macaroni (commonly spelled Microni) is one of the most popular and versatile pasta types in South Asian home cooking. Unlike traditional Italian pasta, local macaroni dishes are often spiced with green chilies, soy sauce, chili sauce, ginger, garlic, and chicken or vegetables

Ingredients for Pakistani Style Chicken & Vegetable Macaroni

  • Macaroni: 2 cups (elbow or shell shape)

  • Chicken: 250g (boneless, cut into small cubes or shredded)

  • Vegetables: ½ cup capsicum (diced), ½ cup carrots (julienned), ½ cup cabbage (shredded)

  • Ginger-Garlic Paste: 1 tsp

  • Oil/Butter: 2-3 tbsp

  • Sauces: 2 tbsp soy sauce, 2 tbsp chili sauce, 2 tbsp tomato ketchup, 1 tbsp vinegar

  • Spices: 1 tsp black pepper powder, ½ tsp red chili flakes (optional), ½ tsp cumin powder, salt to taste

Step-by-Step Recipe

1.Boil the Macaroni:Add salt and oil to water.

Bring 5-6 cups of water to a rolling boil with 1 tsp salt and 1 tbsp oil. Add the macaroni and boil for 7–9 minutes until al dente (cooked through but firm). Drain the hot water and rinse with cold tap water to stop cooking. Drizzle 1 tsp oil to prevent sticking.

2.Cook the Chicken:High heat sautéing.

Heat 2 tbsp oil in a wok or large pan. Add ginger-garlic paste and sauté for 30 seconds. Add cubed chicken, salt, black pepper, and chili flakes. Cook on medium-high heat until the chicken turns white and tender (about 6-8 minutes).

3.Sauté the Vegetables:Keep them crunchy.

Add carrots and capsicum to the chicken. Sauté on high heat for 2 minutes to keep them crisp. Add shredded cabbage last and toss quickly.

4.Add Sauces & Toss:Mix the sauces.

Pour in soy sauce, chili sauce, tomato ketchup, and vinegar. Stir well so the chicken and veggies are well coated in sauce.

5.Toss in Macaroni & Serve:Combine and serve warm.

Add the boiled macaroni to the pan. Toss everything together on high heat for 2 minutes until evenly mixed and heated through. Serve hot with extra ketchup or garlic mayo.
