Mango Custard

Mango Custard is a luscious, creamy South Asian summer dessert made by combining smooth vanilla or mango custard with fresh mango puree, topped with diced ripe mangoes, nuts, and optional mixed fruits.

Ingredients

  • Milk: 1 liter (full-fat gives the best rich texture)

  • Custard Powder: 4 tbsp (Vanilla or Mango flavor)

  • Sugar: ½ cup (adjust depending on the sweetness of your mangoes)

  • Mango Puree: 1 cup (freshly blended ripe sweet mangoes like Chaunsa or Alphonso)

  • Diced Mangoes: 1 cup (cubed small for topping)

  • Nuts & Garnishes: Chopped almonds, pistachios, pomegranate seeds, or silver leaves (vark)

Golden Rules for the Best Texture

  1. Never Add Puree to Hot Custard: Mixing fresh mango puree into hot custard will cause it to curdle or thin out. Always let the custard base cool completely to room temperature first.

  2. Smooth Custard Slurry: Always dissolve custard powder in cold milk before adding to hot milk to prevent lumps.

Step-by-Step Recipe

1.Dissolve Custard Powder:Prepare the slurry.

Take ½ cup of cold milk from the 1 liter. Add 4 tablespoons of custard powder and whisk thoroughly until smooth and lump-free. Set aside.

2.Boil Milk & Sugar:Bring to a boil.

Pour the remaining milk into a heavy-bottomed pot. Add ½ cup sugar and bring to a simmer over medium heat, stirring occasionally.

3.Thicken the Custard:Stir continuously for 3-5 minutes.

Lower the heat. Slowly pour the custard slurry into the warm milk while continuously whisking to prevent lump formation. Cook on low-medium heat until the mixture thickens and coats the back of a spoon.

4.Cool the Custard Base:Cool to room temperature.

Turn off the heat. Let the custard cool completely at room temperature, stirring occasionally to prevent a skin from forming on top.

5.Combine Mango Puree & Chill:Fold & Chill.

Whisk 1 cup of smooth mango puree into the cooled custard until fully blended. Pour into a serving bowl or individual glasses and refrigerate for at least 2–3 hours until chilled. Top with fresh diced mangoes, pomegranate, and chopped nuts before serving.
