Mutton Yakhni Pulao

Mutton Yakhni Pulao is a classic South Asian rice dish where long-grain basmati rice is cooked directly in a fragrant, clear meat broth (Yakhni). Unlike biryani, which relies on layered curries and bold spices, pulao highlights the natural, rich flavors of mutton infused with whole aromatic spices like fennel, coriander seeds, and cardamom.

Ingredients

1. For the Mutton Stock (Yakhni)

  • Mutton: 750g (bone-in pieces work best for a flavorful broth)

  • Water: 6 cups

  • Onion: 1 medium (peeled and halved)

  • Garlic: 1 whole head (top cut off)

  • Ginger: 2-inch piece (lightly smashed)

  • Whole Spice Pouch (Potli) or Loose Spices: 2 tbsp coriander seeds, 1 tbsp fennel seeds (saunf), 1 tsp cumin seeds, 2 bay leaves, 4 green cardamoms, 1 black cardamom, 1 cinnamon stick, 5 cloves, 10 black peppercorns, 1 tsp salt

2. For the Rice & Pulao Base

  • Basmati Rice: 2½ cups (aged long-grain, soaked for 30 minutes)

  • Ghee / Oil: ½ cup (Ghee gives the most authentic aroma)

  • Onions: 2 medium (thinly sliced)

  • Yogurt (Dahi): ½ cup (whisked)

  • Ginger-Garlic Paste: 1 tbsp

  • Green Chilies: 4–5 whole (slit)

  • Spices: 1 tsp cumin seeds, ½ tsp garram masala powder, salt to taste

Pro-Tips for Perfect Pulao

  1. Don't Skip Fennel & Coriander: Fennel seeds (saunf) and coriander seeds are the core aromatics of yakhni. Tying them in a cheesecloth/muslin pouch (potli) makes it easy to remove them before cooking the rice.

  2. Rice-to-Stock Ratio: Use 1.5 to 2 cups of strained broth for every 1 cup of soaked basmati rice to ensure fluffy, non-sticky grains.

Step-by-Step Recipe

1.Prepare the Mutton Stock (Yakhni):Extract deep flavor.

In a pressure cooker or heavy pot, combine mutton, water, onion halves, garlic, ginger, salt, and the spice pouch containing fennel, coriander seeds, and whole spices. Pressure cook for 15 minutes (or simmer covered for 45 minutes) until the mutton is tender.

2.Strain the Yakhni:Separate stock from solids.

Separate the cooked mutton pieces and set them aside. Strain the liquid broth into a bowl, pressing the garlic and spice pouch gently to extract all juices. Measure the strained broth (you need about 4 to 4.5 cups).

3.Fry Onions & Sauté Mutton:Build the pulao flavor.

In a large heavy-bottomed pot, heat ghee. Add sliced onions and fry until light golden brown. Reserve a tablespoon of fried onions for garnish. Add ginger-garlic paste, slit green chilies, and cooked mutton pieces. Stir-fry (bhunai) for 4–5 minutes.

4.Add Yogurt, Stock & Rice:Simmer rice in broth.

Lower heat and whisk in the yogurt. Add garram masala, then pour in the measured yakhni broth. Taste and adjust salt (the broth should taste slightly salty). Bring to a boil, then add the soaked and drained basmati rice.

5.Cook on Dum (Steam):12-15 minutes low heat.

Cook on medium-high heat until most of the liquid evaporates and small steam holes appear on the surface of the rice. Cover tightly with a lid, turn the flame to the lowest setting, and cook on dum for 15 minutes. Let it rest for 10 minutes before gently fluffing with a fork.
