Shanwari Mutton Karahi

Shinwari Karahi (also known as Pashtun or Shinwari Mutton Karahi) originates from the Landi Kotal region of Khyber Pakhtunkhwa. Its trademark features are extreme simplicity, heavy reliance on animal fat or ghee, no garlic or onion

Ingredients

  • Meat: 1 kg Mutton, Lamb, or Chicken (mutton/lamb cut into small karahi pieces with fat is traditional)

  • Tomatoes: 500g–600g (ripe, halved)

  • Oil/Ghee/Fat: ¾ cup oil or rendering fat from lamb tail (Dumba)

  • Green Chilies: 6–8 whole green chilies (slit down the middle)

  • Salt: 1½ tsp (or to taste)

  • Garnish: Fresh ginger juliennes and whole green chilies

Cookware & Golden Rules

  • No Onions, Garlic, Ginger Paste, or Spices: Authentic Shinwari relies entirely on the natural flavor of the meat, fried fat, tomatoes, and salt.

  • Cast Iron Karahi: High heat conductivity is essential to flash-fry the meat without releasing excessive stewing moisture.

Step-by-Step Recipe

1.Sear the Meat & Render Fat:10-12 minutes on high heat.

Heat oil or lamb fat in a heavy karahi over high heat. Add the meat and salt. Stir-fry continuously until the meat releases its moisture, turns brown, and seals in its juices.

2.Add Tomatoes & Steam:Cover for 8-10 minutes.

Place halved tomatoes cut-side down directly over the meat. Cover with a tight-fitting lid on medium heat. The steam will soften the tomatoes and loosen their skins.

3.Peel and Mash Tomato Skins:Removal and mashing.

Remove the lid. Using tongs, easily lift off and discard all the loosened tomato skins. Use a wooden spatula to mash the softened tomato pulp directly into the oil and meat.

4.Add Green Chilies & Reduce:Simmer until meat is tender.

Add whole green chilies. Continue cooking on medium heat until the liquid released by the tomatoes reduces into a glossy, thick gravy base. (For mutton/lamb, cover and simmer on low until meat is tender).

5.Flash-Fry (Bhunai) & Garnish:High-heat finishing (Bhunai).

Turn heat back to maximum and continuously stir-fry (bhunai) until oil completely separates from the tomatoes and coats the meat. Top with fresh ginger juliennes and serve piping hot directly from the karahi with Naan or Afghan bread.ons, and cooked primarily with just tomatoes, green chilies, and salt.
